Yum!!!
We got together at Sister Johnson's house where she taught us to make Southwestern egg rolls. We had fun snacking on chips and salsa, chatting, and helping out in the kitchen...and the egg rolls were WONDERFUL! (They must be healthy because they had spinach.)

The recipe:
Southwest Egg Rolls
4 chicken breasts or 1 rotisserie chicken
1-2 T. oil
1 red bell pepper, chopped
1 bunch green onions, chopped
1 pkg baby spinach
1 c. frozen corn
1 can black beans, rinsed and drained
1-2 T. diced, canned jalapenos
1-2 T. chopped parsley
2 t. cumin
2 t. chili powder
1 t. salt
Dash cayenne pepper
2-3 c. shredded Mexican cheese
1 pkg uncooked flour tortillas

Cook and shred the chicken. Heat the oil in a pan ad saute the bell pepper, green onions and spinach. Add the corn, beans, jalapeno, parsley and spices. Stir and add the cheese and remove from heat. Use 1/2 cup (or more) filling per tortilla and roll up egg roll (or burrito ) style. Bake at 400 for 15-20 minutes.

Avocado Ranch Sauce

1-2 avocados, smashed
1/2- 1 c. mayo (can use light)
1/2-1 c. sour cream (can use light)
1-4 T. buttermilk
1 T. vinegar
1/4 t. salt
1/4 t. dried parsley
1/4 t. onion powder
1/8 t. dried dill weed
1/8 t. garlic powder
1/8 t. black pepper

Mix all ingredients and serve with the egg rolls!


Quilt for Sophia
A few weeks ago we got together to make a quilt for Haley Molyneux's new baby, Sophia. Rachel and Madison picked the cute giraffe print and McKinlee,
Danielle, and Alicia helped to tie it. Cute!!!

June 30 to July 3 was spent at Camp MIA Shalom. The theme was Anchored in Christ and we were the ship O.A.S.I.S. It was quick this year, but every minute was busy. We had a chance to do waterfront, crafts, and games one day. We spent some time getting all the girls certified. Yeah!!! They all did! Good job girls.
As usual the stake presidency did a humorous skit (but we learned that NAVY stands for Neatly Anchored Valiant Youth) then President Olsen gave a brief talk.
Our Bishopric all came for dinner and testimony meeting on the last evening. We always love to see them...especially with key lime cheesecake!

June 24 Madison, Rachel and I went to the fabric store to buy material to make a quilt for Sophie Molyneux. We will post that soon! Then on the 27th we took Danielle and McKinlee shopping for camp food. It always amazes me how much we need for a week at camp!!! But, we are stocked up and ready!



June Oquirrh Mountain Temple Open House

We had a fun day trip to the Oquirrh Mountain Temple. It was a beautiful temple and fun to see all the detailing in the decorating. Poor Angel Moroni's arm was struck by lightening so if you notice, his arm is black.

Brother Albach was our Priesthood leader. After the open house we had lunch at Chick Fil-A. (including a yummy ice cream cone.) This is our fifth temple...well, not for baptisms, but it was a good spirit and we will look forward to doing baptisms there soon!
June 10 YM/YW BBQ

We went to Nielson's Grove park for a BBQ with the Young Men. Sister Siragusa made some yummy hamburgers and we had hot dogs too. Actually, it was quite chilly and threatened to rain, but we had a good time together. Alicia was able to come with her mom so that was fun to introduce her to Young Womens and get her involved. Soon she will be with us at camp and then be in our group every week! Good times ahead!
June 3 Anklets
We made some cute anklets...and some of us made a pair of earrings for each day of the week! Way to go! Congrats to Rachel for her pierced ears:)
